I'm so glad it's the weekend! The weather has been a tad warmer than usual, and I get a long weekend because the school I work at has a bad weather day on Monday.
Today my husband and I are enjoying hanging out, reading, catching up on rest, and getting a few things done that we put off earlier in the week. One of those things for me has been figuring out some new recipes for us to try.
A lot of our diet lately has consisted of crescent rolls (which are super versatile and cheap, but probably not the healthiest option in the world) and ground turkey. Needless to say, we've been getting kind of bored of the three or four dishes we have been cycling through, plus we want to try our best to pick healthy options.
(You can check out a super easy Crescent Roll Pot Pie recipe here!)
So today I made a cup of coffee, pulled out some sticky notes, and sat down with this Healthy Cookbook for Two to tab some recipes for us to try soon. We received it as a wedding gift from my aunt a couple of months ago, so I'm excited to finally give it a try!
Here are 10 healthy recipes for two that we thought sounded especially delicious and would work with our time/budget/tastes.
I'm pretty excited to give some of these healthy recipes a try! There are, of course, way more than ten delicious recipes in this book, but these were a few we chose that we hope to make in the near future.
We plan to likely substitute a few things here and there and maybe leave out a thing or two on some of these (shrimp is honestly more of a special occasion food for us). I'll be letting you know for sure if I cook up a homerun soon.
See any recipes that sound good? Have any to share? I'd love to hear from you!
